I need to remove the 256GB drive for use in another machine. I can either shrink the pool to 2TB or replace with another 1TB ssd I have. I can't tell what data is on the 256 drive nor how to move that data off to the remaining cache drive or to the array. I could just unassigned it, but I don't know what the consequences would be.

You sound like you're CPU limited. I use the Community Apps backup feature. Back up your appdata folder using that, to an array drive. Swap drive, then restore appdata.
