Iirc no prompt to pick it up, walk up to it look at it and spam the use key. Also try highland berries and shadespice highland berries. Seems to be a prefered food. testing now. I have stables but my foal didn't show up in the crafting queue either. SPeed is indeed faster but drains stamina more. Defense are the 'normal' ones. And mneuver gives you slightly more speed and a lot less stamina use. Still though, still feels kinda slow imo.
