The most "thief-y" quests are the ones handed out by Delvin and Vex. While they capture the spirit rather well, they're short, incredibly easy and quite unfulfilling. A handful in the main quest line follow the same vein, but most fell exactly the same as 90% of the other quests you'll be doing in the game.

I know the whole 5-Quests-For-Each-City thing you have to do and eventually I got the Whiterun quest "Imitation Amnesty".
