I have found the best way to only download x265 torrents is to go to the Indexers TAB and at the bottom under the “Restrictions” section click on the “+” and create a TAG with must contain “x265” (no quotes)

If you want both versions available, you can have two sonarrs, one that downloads in h.264 and one that downloads in h.265 (to a different directory). This is a common pattern for having a 1080p and a 4K version of the same stuff. Plex can look at both directory trees and if it finds the show in both, will show them as one show on screen.

There is not going to be a way to get both 720 in anything, and also 1080 in only x265. But you can force a show to only download an x265 1080 copy, but not affect other shows. HEVC and x265 are just two different names for the same thing. Similarly, AVC and x264 are the same thing. Most non-4k x265 content right now is likely to be a reencode from x264. Unfortunately there's really no way to know for sure unless it's specified in the filename which is rare. Personally, I wouldn't worry too much about it.
