Using Steam Deck for productivity is going to be unnecessarily hard. Small screen, low resolution, separate keyboard. I would get an iPad or Surface Go for that, depends what you mean by productivity. As for the 512GB version, that's for people who want to have more than 5 games installed and don't want to bother with external storage.

Only benefit of steam deck over PC is portability and energy consumption. If you don't need to save on energy bills and you don't play outside of your PC, there is not much benefit of having a steam deck. That said, I play on my steam deck only at home.
