Thanks for the responses. My lack of knowledge and relatively brief amount of research always led me to believe S30V is one of the best all around blade steels. I like the sounds of this magnacut steel though. Clearly the best steel is subjective and dependant on its utility.

According to Larrin's tests, Magnacut scored higher than ApexUltra in both toughness and edge retention. (7 and 5 vs 5.5 and 4). Magnacut also beats ApexUltra massively in corrosion resistance of course. Not sure how his samples are heat treated though.
